This post is a three in one! A recipe for Monday, a pinned item I’ve made AND a sponsor highlight for The Great Pinterest Challenge. This sponsor happens to be a friend as well, so when she was in town this summer and had some blogging questions I was happy to get together and share my limited wisdom with her! It was great to catch up! And when she left she gave me one of her Fast Easy Bread Pizza Kits! I was so excited to try it out!
First up her classic stuffed crust pizza! We LOVE homemade pizza around here, but I end up NOT making it as often as my kids would like because I forget to start dinner early enough! My pizza dough recipe is actually super easy because I make it in my bread machine, but that still takes a hour and a half to mix and rise and I tend to forget to start it early enough! So when Lindsey said her dough takes 30 mins, and I could have dinner done in 1 hour I HAD to try it out!

I have to say it was fast and easy, just like advertised, in fact it was SO easy I’m going to make the dough again tonight and try another variation! The dough recipe tastes great, but I do want to try the technique of fast easy bread using my own favorite pizza dough recipe and some of my other favorite yeast breads.
The secret to the fast easy bread are these two ingredients, Liquid Soy Lecithin and SAF-instant Premium high power yeast. You can substitute these into any other recipe you already love! I love love LOVE bread, but rarely make it for the same reason as above, I forget about it too late to make it for dinner! So if I can cut the time down and still get to have my favorite breads I’ll be eating carbs more often!
Basic bread
This recipe makes 2 loafs in 60 mins
5 C BREAD flour (I buy mine in bulk at Costco)
1/4 C Sugar (or use honey, brown sugar, or sweetener)
1 tsp salt
2 Tbsp SAF- instant premium yeast
2 tsp Liquid Soy Lecithin
2 C warm water
Start by mixing your dry ingredients
Next add your lecithin. A mess free way of adding this is to flatten the dry ingredients and using the back of your teaspoon into the flour and pour the lecithin right into that. It worked great! Add the water slowly and mix, if necessary add a bit more water. The dough should be a bit sticky and pull itself off the bowl.
Mix/knead the dough by hand (10 mins) or in your mixer for (5 mins). Don’t add extra flour after kneading.
Separate your dough into 2 loafs! This is where you can either make a basic loaf of bread, pizza, cinnamon rolls, monkey bread, braids, etc…
For our stuffed crust pizza I used mozzarella sticks (string cheese), pepperoni and grated cheese. For the sauce Fast Easy Bread Pizza & pasta seasoning and tomato sauce.
Pizza Sauce
makes enough for 1-2 pizza’s depending on how thick you like your sauce
8 oz can tomato sauce
2 tsp Pizza & Pasta seasoning
I was wary that this would actually taste decent… it was AMAZING, and so much easier than the canned pizza sauce I spent HOURS making last year (tastier too!)
Roll out the dough, spread your string cheese around the outer edge…
I moistened the edge a bit and folded the dough over the cheese and sealed it!
Cover with your favorite pizza toppings, around here that means a thin layer of mozzerella, pepperoni on one half then MORE grated mozzerella with a touch of cheddar!
Bake at 400-450 for about 20 mins. Either on a pan for a soft crust, or like we prefer on your pizza stone for a crisper crust. I found that the 20 mins was a bit too long for us. I cooked it at 425 for 20 mins and I think 15-18 mins would have been better…
The kid’s LOVED it, and I think we’re going to make Pizza a WEEKLY tradition around here!

I have a friend who swears by liquid soy lecithin in her breads & pizza dough! How much is in your recipe? She just kind of eyeballs it.
(Soy lecithin is also useful for chocolate. A friend tells me that non-stick cooking spray is basically soy lecithin!)

Well I’m not really into that much cheese, so I actually ripped mine in half, but then in the end I think the kids might have liked it better with a full string in each so we’ll try it next time!
