I love to cook, I know this isn’t news to any of you. BUT I have to say I’m LATE to jumping on the slow cooker bandwagon! It’s not that I don’t WANT to use my slow cooker, I DO!!! But I am NOT a morning person, like at ALL.
I just can’t seem to get it together that early in my day. I usually roll out of bed in time to get the kids socks and shoes on and rush them to the car, usually still in my pj’s. The day my oldest was old enough to make school lunches was seriously the best!!!
Once I get home (if I’m not running errands) I play with the baby, shower, get dressed and then the rest of the afternoon flys by with blogging work: cooking or baking, photography, editing pictures, writing posts, etc… OR running errands!
Then it’s time to pick up the kids and then take them to their afternoon activities and then it’s home, it’s 5 and I have to rush to get something ready for dinner! THAT’S when I wish I had made the time early to make something in the slow cooker!
So when the chance came up to try out Campbell’s Slow Cooker Sauce I jumped at the chance! I got to try a few flavors: Moroccan Spiced Stew, Sweet Korean BBQ and Tavern Style potroast. They tasted great and were so easy!
It was less than 5 mins or prep time. In fact I even put the meat in frozen so I didn’t have to remember to thaw it! Just toss in the protein and sauce with no prep work, serve with some rice, noodles or buns and your good to go, a totally easy slow cooker recipe!
I loved how simple it was AND it’s totally versatile! If you want to add other foods and mix it up a bit you can do that too! My husband thought that the Moroccan spiced stew was a little strong (I loved it, I ate it sloppy joe style on some homemade buns).
So I decided to make it again, this time with some extras. That way it fed more people (we have a somewhat large family) and created a different meal and still had an amazing flavor. A complete meal in one pot is always nice (I’m terrible at remembering side veggies and salads)
- 2-3 breast chicken
- Campbell's Slow Cooker Sauce - Moroccan spiced stew
- 1 medium onion
- 6 red potatoes cubed
- 1 C carrots, mini or chopped
- 2 C chicken broth
- 1 C orzo
- 1 C raisins
- half bunch cilantro chopped
- place the chicken breasts, sauce, onions and potatoes in your slow cooker.
- Cook on low for 8 hours or high for 4 hours.
- About an hour before your ready to eat add the chicken broth and carrots
- Add the orzo, raisins and cilantro about 15 mins before your ready to eat, stir
- Stir and serve, top with cashews (and a sprig of cilantro
I’m excited to try the other slow cooker packages, Hawaiian Luau and Mexican Red Chile Taco! I’ll keep some of these around to toss in with frozen meat on crazy days and I’ll have an easy weeknight dinner!
AND the best part is my 12 YO want’s to start being responsible for dinner once a week. Maybe I’ll take over lunch box duty one day and she can get the slow cooker started for me???
