Creamy Jalapeno dip

I love dips, and salsa’s. Anything with tortilla chips is alright with me. So when my girlfriends took me out to a Tex Mex restaurant for my good bye meal (when we moved from Houston to Salt Lake City 1 1/2 years ago) I just HAD to try the dip my girlfriend was raving about. Mmmmm She was not wrong. It was AMAZING! The three of us used to cook together every week so we all went home to try to recreate it (well I hopped into my van to drive cross country for a week, but you get what I mean here). After finding a few different recipes we mixed and matched until we were happy with it! It’s the perfect mix of spicy and creamy for me.

Creamy Jalapeno Dip
makes 2 1/2 cups
1 1/2 cups ranch dressing (I make my own)
1/2 cup sour cream
1 (4 ounce) can green chilies
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon lime juice
1-3 tablespoon fresh cilantro
2-4 pickled jalapeños to taste
I make my own ranch first, mixing it in the blender, then add everything but the jalapeños and blend until smooth. Once your at this stage start adding the jalapeños to taste.  /Chill for a few hours or over night and serve!  Keep refrigerated.

I have a hard time finding whole pickled jalapeños so I use these nacho slices, and I like to use about half a jar, but I don’t use the juice.  The jalapeno’s flavor gets stronger the longer it sits so if your not going to eat it right away go for less.   I tend to eat it pretty darn fast, but once I made a HUGE batch and didn’t get it all eaten right away, after a while it got a bit hot so I just made up some ranch and added it!  Worked great.  I seriously LOVE this dip, and I make it ALL the time.  One of my late night staples.

    • wonderful! This is a terrific dip! A note- the jalapeños gets stronger the longer it sits. So if you make it a day a head just be aware of that! I made a double batch and after a few days I had to add more ranch to cool it down a bit.

    • Thanks! It’s a great dip recipe! I have never tried candied jalapeños! I’ll have ot get some, my whole family loves jalapeños, I’ll have to get them for a next reunion!
