Crepe Bar Birthday Party

Last month was my mom’s birthday! She and my dad are living here right now, and it’s the first time we’ve been close for her birthday since I was in high school, so it seemed like the perfect time to throw a Surprise party!

Because it’s UTAH, it’s a small world and we all know lots of people here. She has a sampling of friends from like every age and stage of our lives living here so my sister and I invited all the ones we could find.

When we were talking about the food we really quickly decided on a crepe bar!  And then we picked our color scheme (Brown, tan, cream, burgundy!) and everything fell into place!!!  I’m sharing half the recipes on my blog (scroll down) and the other half are on Chelsea’s Crepe Party Post

My mom’s favorite is my flourless chocolate cake so I made that for her, dressing it up with stabilized whipped cream and black berries.

We made three crepe flavors, plain, cinnamon and chocolate!!! (the chocolate recipe is below, my plain crepe recipe is here on this post and my sisters plain and cinnamon is here on Chelsea’s post)

For the fillings we had a sweet cream cheese, a TART sour cream/cream cheese and a lemon sour cream filling.  For toppings we have the buttermilk syrup, my hot fudge and my berry coulis! (The tart filling is below, the sweet and lemon are on Chelsea’s post, the buttermilk is either here on my post, or my Chelsea’s post.  The hot fudge and coulis is down below)

I made stabilized whipped cream, so it could be left out during the party and not  all melty… and three berry filling options, strawberries, mixed berries and bananas (bleck).

For those who really love it rich we had vanilla ice cream (also it’s good on the cake!) I printed off two full sheets, pressed them around the container and cut it to fit.

Wash it all down with milk… (we had water too of course).  I LOVE my sisters cake plate… I need one (anyone know where I can find something similar?)

We had to create some samples to show off for you guys!  Chocolate with tart sour cream/cream cheese, strawberries, coulis and whipped cream… Mmmmmm

Cinnamon crepes with sweet cream cheese filling, banana’s and strawberries, hot fudge and whipped cream (I picked around the banana’s- Ewwww)

Plain crepes with lemon filling, mixed berries, buttermilk syrup and more whipped cream!  So so SOOO good!

Better than Sex trifle recipe

Everyone has their version of this dessert, and this actually comes from my sister’s recipe.  Don’t forget to link up your pinterest inspired recipes, crafts, DIY, etc…!!!

Rather than just make cake this trifles layers all the goopy goodness and ends up SO moist and delicious. My sisters version just uses cool whip, but I like making my own whipped cream. BUT you want to be able to make it a day ahead and not totally dissolve, so STABLIZED whipped cream!

Better than sex trifle
1 Devils Food Cake baked
16 oz whipped cream, stabilized with gelatine
1 jar caramel sauce
1 can sweet and condensed milk
5-6 skor bars/ heath bars chopped

cut the cake into 1 inch sections. Place half on the bottom of your trifle dish. Then pour half the can of sweet and condensed milk across the top, then half the caramel, then sprinkle with skor pieces, finish with half the whipped cream.

repeat the cake/milk/caramel/skor/cream layer, sprinkle the top with MORE skor bars (and a decorative whipped cream border). NOW let the trifle set 8 hours or over night! This will let everything set and get extra goopy!

Stabilized Whipped Cream
1 tsp unflavored gelatin powder
1/4 C cold water
2 C whipping cream (regular or heavy–I always use heavy cream)
1/4 C confectioner’s sugar
2 tsp vanilla

sprinkle the gelatin over the cold water and let it bloom for 5 mins. While that’s resting add the sugar and vanilla to the whipping cream (feel free to do more or less to your tastes). Once the gelatin has bloomed microwave it until it’s dissolved. Then, while whipping the cream in a mixer with a whisk attachment, slowly add the gelatin to the cream. Beat until soft or stiff peaks form (your preference) and keep refrigerated!

You can spread it on, use it for icing, pipe it, etc… If you want it to stay white use CLEAR vanilla, mine ended up tinted with my homemade vanilla recipe.

Five Wedding Cupcake recipes

When my cousin told me she wanted to do cupcakes for her wedding I about cried.  I think I’ve mentioned it before, but I’m NOT a cupcake fan.  BUT for family, esp a wedding, they get what they want!  In the end it wasn’t so bad!  I used a new tip and my sweet friend Jesseca came over to help and it went pretty fast!!

My cousin wanted 14 dozen and she picked 5 flavors.  Strawberry with Cream cheese frosting, Chocolate with Chocolate buttercream, “Blue” red velvet with Cream cheese frosting, Vanilla with Vanilla buttercream and Lemon with Lemon buttercream.

Now cupcakes and cakes are totally different.  You want your cakes dense, moist and fairly FLAT for frosting.  Cupcakes should be light, moist and NOT flat…  So I have totally different recipes for cakes and cupcakes.  Don’t use these recipes for cakes. I use my Bosch mixer with the whisks to beat the batter up. BUT if your going to eat a cupcake these are delicious, AND I’ve PERFECTED my frosting recipes!

We made each cupcake look as different as possible so people would be able to recognize the different flavors.  AND a menu!  I suggested a “chalkboard” picture frame menu.  My sweet cousin was so smart!  she did it on black construction paper!  So we didn’t have to worry about it rubbing off, it looked amazing!

Ivory Home Gingerbread house contest – Charity event

I love love LOVE making small gingerbread houses with my kids and their cousins every year. It’s a really fun tradition. Growing up I always loved visiting the gigantic gingerbread village in Portland. I’ve ALWAYS wanted to go all out and make a really big detailed house! So when I heard about the Ivory Homes third Annual Gingerbread contest I was all in! I’m already working on my house plans!

The contest includes handmade gingerbread houses (from people like you and me!!!! Eeeek, so fun!), cash prizes AND matching donations. How sweet is that? You all know that autism spectrum is near and dear to my heart so I know just what charity I would pick. How about you?

Top prize for the contest is $1,000 with a matching donation made to the charity of your choice. Second and third place are $500 and $250 respectively, also with matching donations. That’s pretty incredible if you ask me.

Here are some of last years AMAZING entries. I was totally excited to enter, and even naively thought I had a shot. But when I saw how AMAZING last years entries were I realized I don’t have the time to be quite this amazing… THIS year!! Luckily they don’t HAVE to be amazing, it’s just fun to create and enter!!! In fact I’m also registering my daughter and she’s making her own!

Here are the details on how to enter the gingerbread house challenge:

  1. Register for the contest.
  2. Pay a $10.00 registration fee that will be fully refunded when you deliver your house to the festival.
  3. Pick an Ivory Home design ( your home must be modeled after an Ivory Homes design).
  4. Build your gingerbread house.
  5. Check-In using the online form that we will provide as the festival gets closer.
  6. Deliver your gingerbread house to the Garden Park Clubhouse in Daybreak on Friday, November 30th.
  7. Receive your $10.00 registration fee refund.
  8. Vote at the festival on December 1st and tell your friends to vote for your house on Facebook.
