Cinco de Mayo fondant cake

Last weekend I was able to attend the first Breathing Space bloggers retreat over in Daybreak, UT.  It was fun to catch up with old friend, meet some new friends and connect with people in real life that I’ve only known online!  I really enjoyed being a part of it and I’ll post more about it later.

There were themed dinners both nights, the first night being “stepford wives” and the second night was Cinco de Mayo!  We had an AMAZING dinner sponsored by Cafe Rio.  Mmmm I’m totally craving it right now.  If you haven’t been you should go, and they rapidly expanding all over the country!

I got to make the cake for the Cinco de Mayo dinner!  And it was a BLAST! so many fun colors and such a fun and festive theme.  The flowers I created were in reminder of those tissue paper flowers we all made at school.

The ruffled layer reminds me of pinata’s…  And lets face it, who doesn’t love pinatas?

And the colorful chevron was because they were decorating in chevrons…  I made three different flavors, my chocolate, strawberry and red velvet!  They were all popular and everyone loved the cake- which tickles me to know end!
